
SOUS VIDE BELLY PORK (Cooked)
This recipe has been put together by our Development Chefs, just follow the steps below.
NB: you will need 2 packs of the sous vide pork belly portions for this recipe.
Ingredients (Serves 4)
2 x 2 Portions Cooked Pork Belly
200g Black Pudding
200g Chorizo
200g Baby Spinach
20ml Honey
For The Sauce
2 Shallots
1 Carrot
1 Stick of Celery
2 Garlic Cloves
250ml Red Wine
500ml Beef Stock
8 Sprigs Fresh Thyme
50g Butter - Cubed
Method
1. Start by preparing the sauce, dice the shallot, carrot, celery and garlic and place into a saucepan with a little vegetable oil and season with salt. Place onto a gentle heat and cook gently until the vegetables are soft and translucent.
2. Add the red wine and turn up the heat, cook until the wine has reduced by two thirds and then add the beef stock and the thyme. Continue to cook until the sauce has reduced by a third.
3. While the sauce is cooking, place the belly pork portions skin side up, in a roasting tray with a little water. Place into a pre-heated over at 180 degrees fan for approx. 20-25 minutes, until hot throughout.
4. Dice the chorizo and the black pudding into 5mm cubes, wash the baby spinach thoroughly.
6. Heat a little oil in a large frying pan, once hot, add the chorizo and black pudding and sauté over a medium heat until crisp and hot. Add the spinach to the pan and cook until the spinach has wilted.
7. Remove the belly pork from the oven and glaze each piece with a little honey and then return to the oven for 5 minutes until the honey is golden and caramelised.
8. To finish the sauce, strain into a clean saucepan to remove the vegetables and thyme sprigs and return to the heat, gradually whisk in the butter until the sauce is thick and glossy.
9. Place the roasted belly pork on top of the chorizo, black pudding and spinach and spoon over the sauce, serve with a side of smooth, buttery, mashed potato!
